Healthy Pancakes

While traditional pancakes that are smothered in chocolate, sprinkled in sugar and topped with ice cream aren’t the healthiest option, here’s a few alternatives to make some delicious pancakes that are tasty and healthy.

 

Banana pancakes

These banana pancakes are so easy and quick to make. They’re also gluten-free, low-calorie and definitely guilt-free!

Ingredients:

  • 1 ½ large bananas
  • 2 eggs
  • ½ tsp baking powder

Method:

  1. Crack the eggs into a mixing bowl and whisk together with the baking powder.
  2. In another bowl, Mash the bananas with a fork.
  3. Add the egg mixture to the mashed bananas and stir together.
  4. Cook over a medium heat, flipping it over and cooking on both sides until golden brown.

 

Honey and Cinnamon Pancakes

Honey is a great alternative to sugar and is has lots of great health benefits.

  • 150g Gluten Free White Self Raising Flour
  • 1/2 teaspoons Gluten Free Baking powder
  • 1/2 teaspoons Ground Cinnamon, plus extra for dusting
  • 1 medium Egg
  • 150 ml Skimmed Milk or Almond Milk

Method:

  1. Sift the flour, baking powder and cinnamon into a large bowl, mix and create a well in the middle.
  2. Crack the eggs into the well and whisk together
  3. Slowly add in the milk and blend until smooth.
  4. Cook over a medium heat, flipping it over and cooking on both sides until golden brown.
  5. Drizzled a little honey on top of the pancakes and sprinkled with a little more cinnamon.

 

Goats Cheese and spinach Pancakes

  • 150g Gluten Free White Self Raising Flour
  • 1/2 teaspoons Gluten Free Baking powder
  • 1 medium Egg
  • 150 ml Skimmed Milk or Almond Milk
  • Goats Cheese
  • 100g cooked spinach leaves

Method:

  1. Sift the flour and baking powder into a large bowl, mix and create a well in the middle.
  2. Crack the eggs into the well and whisk together
  3. Slowly add in the milk and blend until smooth.
  4. Cook over a medium heat, flipping it over and cooking on both sides until golden brown.
  5. Add the spinach leaves and goats cheese to the pancakes, put under a hot grill for a couple of minutes until the cheese has melted and serve hot.

 

Alternatively you can always opted to swap white flour for wholemeal self raising flour. If your gluten sensitive you can use a combination of almond, coconut and tapioca flour to create delicious gluten free pancakes.
